We are using:
--- Arduino and sensors:
ESP8266
ds18b20
pH sensor
water level sensor, and
--- Thingspeak for storing sensor data
--- MIT App Inventor for the app controller
How can we send the sensors' data that we got from Arduino to Thingspeak? And then how can we extract that data to show to MIT App Inventor in a list view? What kind of blocks should we use?

have a look at the Arduino examples, they show both reading and writing from a device:
https://www.mathworks.com/help/thingspeak/arduino-or-particle-photon.html
especially this one
https://www.mathworks.com/help/thingspeak/rapid-prototyping-with-thingspeak.html
or for esp8266
https://www.mathworks.com/help/thingspeak/esp8266.html
especially this one:
https://www.mathworks.com/help/thingspeak/read-and-post-temperature-data.html
I found some good tutorials on MIT app inventor here:
http://appinventor.mit.edu/explore/ai2/tutorials.html
I susect you will use REST calls to extract the data:
