I gather ThingSpeak is open source. Is it possible to host an equivalent cloud server oneself with the ThingSpeak open source software running on ones own hardware and also perhaps allow more fields per channel or more frequent posting, without burdening the ThingSpeak service and what is such a great free offering?

Thanks for the props to ThingSpeak. We think its pretty great too.
While there is an open version of ThingSpeak available, it is not supported by MathWorks. You might be able to add fields, but you wont have access to MATLAB and if your server goes down in the middle of the night, there wont be a team working to get it back up immediately.
You can consider purchasing a license to get increased frequency of posting, and other benefits.

You can also use the location and status fields or multiple channels to simulate having more than 8 fields.
