Good morning. Please tell me if thingspeak can receive, then represent only numerical data or also text? Let me explain: I am preparing a program with bme280 which, based on the variations in atmospheric pressure, should foresee text values: tendency to good weather, bad .... Can these textual values be presented? Thanks!

Yes ThingSpeak receives all data as strings, numbers are interpreted from strings.
When you read data with thingSpeakRead, be sure to use 'outputformat','table', or 'outputformat','timetable',
To diplsay the values, you can use uitable, as explained in This post
Here is a snippet:
myT = thingSpeakRead(1417,'outputformat','table','numminutes',200);
array1 = myT.CheerLightsHEXColor
array2 = myT.LastCheerLightsCommand;
uitable isn't perfect, but it works. I came up with a different solution once but I cant seem to find it.
