I have used Thingspeak on the "commercial" thingspeak.com site for a number of years, to keep track of weather data at my house.
Recently they have restricted the number of channels that you can have their without paying. This information is just for my personal use,
so I can't justify the yearly charge.
I can host this myself (I have the HW and general knowledge to set things up) but I don't see any updates to the github repository in 8 years in some cases.
I'm trying to get an understanding of whether or not it's being maintained, supported, etc.
I'd also like to know how close it is to the current production instance... is it close? Much older? Or?
I'd rather not waste my time installing it if it's not going to be supported... either by the community or by the company.
I'll come up with a different solution but would like to use it if I can...

MathWorks does not support the open source version of ThingSpeak. There are many parameters and features that exist on the present site that are not available in the open source version. That said, I have seen some discussions here on the forum where some people will offer support for others trying to install that version.
There are some fairly low cost options available for home licensing, have a look at https://thingspeak.com/prices
